Sugar and Fat Free Date & Banana Cake
This cake does not have either sugar or fat – really great taste.
Make in a loaf tin approx. 10 x 20cm (4 x 8”)
250g (9 oz) Stoned ready to eat dates
1 large Banana
225g (8 oz) raisins
225g (8 oz) saltanas
110g (4 oz) Plain Flour
2 teaspoons of baking powder
2 teaspoons mixed spice
2 tablespoons orange juice
Heat oven to 180°C or 350°F and line the tin with non-stick baking paper.
Put the dates in a small pan with 200ml of boiling water and simmer for 5 mins.
Drain and reserve the liquid. Put the dates in a food processor adding 100ml of the date water together with the banana and process until smooth.
In a bowl mix together the dried fruit, flour, baking powder and spice. Add the date puree, orange juice and egg yolks.
Whisk the egg whites to soft peak and fold into the cake mixture.
Bake for approx. 1 hour until a skewer come out clean.
